lower salmon river squash

This is one of my favorite new varieties in our garden. The squashes are SWEET, creamy, and delicious. They are slightly less dry than a buttercup/kabocha but equally yummy. They happen to also be large squashes, so they'd be great to feed a crowd or you can freeze the extra. These squash have a VERY hard rind, so you may need to bring it out to your woodshed to split it open with an axe (seriously) or (more reasonably) bake it whole in the oven.

Additional awesomeness with this squash is that my dear friends at Affinity Farm in Moscow, ID grew out this seed and shared it with me.

Comes to ~1.50/#, these average 7.5 pounds.
